Yellowfin tuna, also called albacore or yellowfin (due to its distinctive yellow fins), is a migratory species caught mainly in tropical and equatorial waters. It is perhaps the most used tuna for canning. Its flesh is firm and pinkish in color. Once the best specimens are selected and the cooking process is complete, the fish is prepared and packaged using traditional techniques. For the preparation of our preserves, we use albacore tuna loins to which we add our specially selected olive oil, which provides an exclusive aroma and flavor.
